Led by Chef Valentino and maître d’ Vincenzo, Fvsion Cortina combines the founders’ initials and offers an innovative gastronomic experience that blends Italian and Japanese cuisine. Located near the center of Cortina d’Ampezzo, the restaurant has been recently renovated to incorporate modern technologies and features two rooms with distinct styles: Ampezzano and Japanese fusion.
Valentino, with a background in Michelin-starred restaurants, and his team specialize in dishes that balance innovation and tradition, including options for vegans and traditionalists, supported by nutritionist Dr. De Pol. Vincenzo ensures excellent customer service, recommending dishes and wines tailored to guests’ personal tastes.
Fvsion offers personalized catering services for corporate and private events, as well as take-away and delivery services, with sushi prepared according to strict hygiene standards.
Orders can be placed by phone or WhatsApp, and deliveries are made between 7:00 PM and 9:00 PM. Small four-legged friends are welcome.
